Reawakening Beauty Lemon Cranberry Glow Loaf

Ingredients

Dry Ingredients

  • 2 cups Almond Flour
  • 1 pinch Salt
  • 1/2 cup Monk Fruit Extract
  • 3/4 tsp Baking Powder
  • 2 tsp Organic Cinnamon

Wet Ingredients

  • 1/2 Organic Lemon (juice and grind from the peel)
  • 2 packs MCT oil (using my favourite brand)
  • 1 Flax Egg
  • 1/3 cup Frozen Organic Cranberries (chopped or broken with hands)

Instructions

Makes 8-12 servings

Preheat oven to 320°F. Add the dry ingredients into a large glass bowl and mix well. Next, mix in the wet ingredients until well blended. Add mixture in a baking pan sprayed with avocado oil spray and place in the oven for 35-40 minutes. Remove and let cool or alternatively you can eat it warm if you prefer it crumbly.

Both Lemons and Cranberries are high in Vitamin C and rich in antioxidants which is said to help protect your skin cells against damage from harmful free radicals.

Vegan Eggplant Pizza for Healthy Skin

Ingredients

  • 1 Medium-Large Sized Organic Eggplant
  • Organic Spicy Herbed Sea Salt
  • Organic Italian Seasoning
  • Pasta or Pizza Sauce
  • (I prefer the brand Just Sauce – Hot and Spicy)
  • 1/4 cup Vegan Cheese
  • (I prefer the brand Daiya – Mexican 4 Cheese)
  • 1 tsp Organic Red Pepper Flakes
  • Organic Spinach Leaves (optional)

Instructions

Makes 2-4 servings

Evenly cut the organic eggplant into 1/2-3/4 inch slices. Place eggplant slices flat onto a paper towel. Coat both sides of the eggplant slices with the organic herbed sea salt. Add another layer of paper towel on top and leave for 30 minutes. After 15 minutes preheat oven to 325°F. Remove eggplant from the paper towel and dab each slice to remove any remaining moisture. Place eggplant slices on a baking sheet lined with parchment paper and coat the top of the eggplant with italian seasoning. Place in the oven for 23-25 minutes. Remove from the oven and switch to the broil (high) setting. Add a small amount of pasta or pizza sauce to each eggplant slice. Top with vegan cheese and return to oven for 5-6 minutes (or until cheese is melted). Remove from the oven and top with red pepper flakes or spinach leaves based on your preference!
