Lemon Smoothie

Ingredients

  • 2 Scoops Keto Vegan Vanilla Protein Powder (all natural ingredients)
  • 1/2 Fresh Lemon (seeded and peeled)
  • 12 Oz. Almond or Coconut Milk
  • Ice

*you can skip the ice and replace with frozen strawberries

Instructions

Add the liquid (plant milk) to your blender. Always start with your liquid to make blending easier. Next add in the Vanilla Protein and the fresh lemon. Lastly add some ice (or frozen strawberries) to make the smoothie a little thicker.

Then finally blend, blend, blend and enjoy!

Pro Tip: Don’t forget the Ice! 6 cubes (1 cup), according to your taste.

Topping Options: Grate lemon and mint, and add to the top.

BENEFITS: Lemons have vitamin C which has been known to help produce collagen when used topically on the skin. So drinking this smoothie could help improve your collagen production. Also Vitamin C is known as an antioxidant that helps with free radical damage which causes premature aging and also improves your immune system. Vegan Keto Chocolate Chip Cookies

Vegan Keto Chocolate Chip Cookies

Ingredients

  • 2 cups of finely ground almond flour
  • 4-8 tbsp of dairy free and sugar free chocolate chips (ex. Lily’s Dark Chocolate Chips)
  • 4 tbsp Monk Fruit Sweetener or Coconut Sugar
  • 1/2 – 1 scoop Protein Powder (Chocolate)
  • 1 scoop Prebiotic Fiber (Optional)
  • 1/2 tsp of pink himalayan salt
  • 1/4 tsp of baking soda
  • 4 tbsp of coconut oil (preferably stored in a glass jar)
  • 2 tsp pure organic vanilla extract
  • 4-6 tsp of your choice of non-dairy milk (I prefer to use unsweetened vanilla almond milk)

Instructions

Before beginning preheat the oven to 325 F. Start by mixing all dry ingredients together in a large bowl. Once thoroughly mixed add the wet ingredients and stir very well until a dough is formed. Scoop cookies onto a cookie sheet lined with parchment paper. I like to use a 1 1/2 tbs scoop to form a cookie ball. Place the cookie tray into the over on the center rack for 10-12 minutes. Once finished baking, remove the cookies from the over and let them cool for an additional 10 minutes as they are very delicate when first removed but will firm up once cooled. Enjoy this healthy snack!

Vegan Glow Fresh Rolls

Vegan Glow Fresh Rolls

Ingredients

  • 6 – 8 Pieces of Rice Paper
  • 1 Red Pepper (cut up)
  • 1 Cup Basil or Parsley
  • 1 Cup Shredded Carrots
  • 1 Cup Baby Spinach or Lettuce
  • 1 Cup Cucumber (sliced length wise)
  • 2 Cups Warm Water
  • 2 Tbs Almond Butter
  • 3 Tbs Vegan Hoisin Sauce (no soy)

Instructions

  1. Cut up the veggies (julienne cut) and place in separate bowls.
  2. Place one sheet of rice paper in a frying pan half-filled with warm water. Remove after 5-10 seconds, once paper becomes soft. Blot off excess water.
  3. Lay the rice paper flat on a clean surface and place the veggies in the middle.
  4. Fold edges of rice paper over and tightly roll the wrapper. Set aside.
  • Repeat steps 2-4 for each rice paper

Pro Tip: Feel free to add mint or mango if you are not a fan or basil or parsley. Also, you can use the Vegan Green Glow Goddess recipe as a alternative dip.

Healthy glow fresh rolls are loaded with iron, vitamin k, and beta carotene.

I love adding cucumbers for internal hydration and vitamin K, and carrots for their beta carotene which is wonderful for the skin as it reformats to vitamin A inside the body, which is highly beneficial to the skin and eyes.

This is my go-to meal on busy days, I store them in the fridge and have them with a protein shake or side of chickpea salad. See my blog for all recipes or #TastyTuesday
