Vegan Healthy Glow Salsa

Ingredients

  • 1 package Plant Based Ground Beef (Beyond Meat)
  • 1 can 398ml Organic Refried Beans
  • 2 3/4 cup Salsa (I prefer Medium or Hot)
  • 3/4 cup Vegan Cheese (I prefer a Mexican cheese blend)

Instructions

Preheat the oven to 350F. Cook the plant based ground beef in a non-stick pan over Medium to High heat for 7-10 minutes, breaking to desired crumble size and stirring occasionally. Set aside when done. In a casserole dish, add a layer of refried beans, then a layer of the plant based ground beef, then a layer of salsa and finish with a layer of Vegan cheese. Add the casserole dish to the over and cook for 20-25 minutes or until cheese has completely melted. Enjoy with a side of gluten free nachos or mixed in salad.

Plant based ground beef is very high in Vitamin B12 which is said to boost your energy and improve your memory.

Hot Girl Summer Vegan Charcuterie Board

Ingredients

  • Vegan Green Goddess Halloom Cheese (200g)
  • Vegan Organic Smoked Gouda Nut Cheese (120g)
  • Vegan Green Goddess Cheese (200g)
  • 1 pkg Organic Gluten Free Crackers
  • 1 bunch Organic Green Grapes
  • 1 bunch Organic Red Grapes
  • 1/2 cup Organic Olives
  • 1/2 cup Organic Tofu
  • Organic Basil Leaves
  • Cheese Board

Instructions

Cook the organic tofu as per my lemon ginger spiced tofu recipe, place aside. Next, soak the organic grapes in a bowl filled with filtered water and baking soda. Lay out the organic basil leaves onto the cheese board. Cut the vegan cheese into equal portions maintaining the same triangle shape. Place the vegan cheese onto the board in three sections, one of the left side, one in the center and one on the right side. Rinse the organic grapes, and place onto the board in front of the cheese. Spread the organic tofu and organic olives around the cheese and grapes. Add the organic gluten free crackers on the side and enjoy!

Benefits:

Organic grapes are high in polyphenols which are said to help prevent skin damage caused by free radicals. Organic olives are high in vitamin E which acts as an antioxidant and is said to help protect your cells from damage.

Vegan Healthy Skin Guacamole

Ingredients

Dry Ingredients

  • 2 1/2 Organic Avocados (halved, seeded and peeled)
  • 1 Organic lime (juiced)
  • 1/2 tsp Sea Salt
  • 1/2 tsp Organic Cayenne
  • 1/4 medium Organic Onion (finely chopped)
  • 1/4 Organic Jalapeno Pepper (seeded and minced)
  • 2 Organic Roma Tomatoes (seeded and diced)
  • 1 tbs Organic Cilantro (finely chopped)
  • 1 clove Organic Garlic (minced) or 2 tbs Organic Garlic Powder
  • 1 tbs Organic Low Sugar Salsa (optional)

Instructions

Makes 3-4 serving

In a large bowl mix the avocado and lime juice, toss to coat. Using a potato masher (or fork) add the salt, cayenne, and mash. Stir in the onions, jalapeno, tomatoes, cilantro, garlic and optional salsa. Let sit at room temperature for 1 hour and then serve with rice chips or veggies.

Be sure to eat within 1-2 days as a snack.

Vegan Gluten Free Double Chocolate Cookies

Ingredients

Dry Ingredients

  • 1/2 cup Vegan Clean Chocolate Meal Replacement
    1/2 cup Organic Almond Flour
    1 scoop Prebiotic Fiber (Optional)
    1/4 tps Baking Soda
    1/8 tsp Salt
    1/4 cup Vegan Unsweetened Chocolate Chips
    1/2 cup Erythritol & Monk Fruit Extract (or Monk Fruit Sweetener)

Wet Ingredients

  • 1 tbs Organic Coconut Oil
  • 6 tsp Organic Unsweetened Almond Milk

Instructions

Before beginning preheat the oven to 320°F. Start by mixing all dry ingredients together in a large bowl. Once thoroughly mixed add the wet ingredients and stir very well until a dough is formed. Scoop cookies onto a cookie sheet lined with parchment paper. You can form them into a regular shaped cookie or a cookie ball. Place the cookie tray into the oven on the center rack for 10-12 minutes. Once finished baking, remove the cookies from the oven and let them cool for an additional 10 minutes as they are very delicate when first removed but will firm up once cooled. Enjoy this healthy snack!

Lazy Girl Protein Snacks For A Glow

Ingredients

  • 1/2 cup Mixed Nut Organic Nut Butter (ideally almond or cashew)
  • 2 tbs Organic Cinnamon
  • 6 scoops Clean Keto Vegan Strawberry Protein Powder
  • 4 tbs Monk Fruit Sugar or Coconut Sugar
  • 1 scoop Fibre
  • 1 tbs MCT Oil

Instructions

In a large mixing bowl, add the nut butter and MCT oil first and stir until combined. Then add all the dry ingredients and mix thoroughly. Grab a tsp or tbs, and scoop the mixture onto a cookie sheet lined with parchment paper and form into a ball. Place in the fridge or freezer for 30 mins and enjoy. Store in the fridge and eat immediately as the do melt.

Cashew are rich in vitamins such as E and C which are said to help the skin radiance. Cashews are also high in copper which is said to help with production of protein thus helping with elasticity.

Vegan Almond Butter Beauty Balls

Ingredients

  • 1/4 cup Unsweetened Dried Cranberries (chopped) or 14 Medjool Dates (pitted)
  • 1/4 cup Raw or Roasted Almonds (crushed)
  • 1/4 cup Gluten Free Quick Rolled Oats
  • 4 tbsp Organic Almond Butter
  • 1 tsp Cinnamon
  • 1-2 tbsp water (if needed)

Instructions

Line a baking tray with parchment paper. Place the cranberries (or dates), almond butter, rolled oats and cinnamon into a food processor and blend until a dough begins to form. Add water if needed. Using your hands, roll tablespoonfuls of the mixture into snack-sized balls. Put the crushed almonds onto a plate or flat surface and roll the balls in the nuts to coat. Place the balls onto the baking tray and refrigerate for 30 minutes.

Benefits:

Almonds are a great source of vitamin E, protein, and fiber. They are also high in antioxidants which is said to help protect against oxidative stress, which can damage molecules in your cells and contribute to inflammation and aging.
