- 1 Medium-Large Sized Organic Eggplant
- Organic Spicy Herbed Sea Salt
- Organic Italian Seasoning
- Pasta or Pizza Sauce
- (I prefer the brand Just Sauce – Hot and Spicy)
- 1/4 cup Vegan Cheese
- (I prefer the brand Daiya – Mexican 4 Cheese)
- 1 tsp Organic Red Pepper Flakes
- Organic Spinach Leaves (optional)
Makes 2-4 servings
Evenly cut the organic eggplant into 1/2-3/4 inch slices. Place eggplant slices flat onto a paper towel. Coat both sides of the eggplant slices with the organic herbed sea salt. Add another layer of paper towel on top and leave for 30 minutes. After 15 minutes preheat oven to 325°F. Remove eggplant from the paper towel and dab each slice to remove any remaining moisture. Place eggplant slices on a baking sheet lined with parchment paper and coat the top of the eggplant with italian seasoning. Place in the oven for 23-25 minutes. Remove from the oven and switch to the broil (high) setting. Add a small amount of pasta or pizza sauce to each eggplant slice. Top with vegan cheese and return to oven for 5-6 minutes (or until cheese is melted). Remove from the oven and top with red pepper flakes or spinach leaves based on your preference!
