- 12 oz Gluten Free Italian Bow Tie or Farfalle Pasta (cooked al dente)
- 1 can (15 oz) Organic Diced Tomatoes (drained)
- 2 cups Vegan Shredded Mozzarella Cheese (or any preferred plant-based cheese)
- 1 tsp Dried Basil (optional)
- Salt & Pepper to taste (optional)
- Vegan Buffalo Sauce (optional)
Instructions
Makes 4-6 servings
- Preheat and Prep: Preheat your oven to 375°F (190°C). Grease a 9×13-inch casserole dish with olive oil or non-stick spray.
- Layer the Ingredients: Start by spreading the diced tomatoes evenly on the bottom of the casserole dish. Optionally, season with a pinch of salt, pepper, and dried basil.
- Build the Bake: Add a layer of cooked pasta on top of the tomatoes, followed by a generous sprinkle of vegan shredded mozzarella. Repeat the layering process (tomatoes, pasta, cheese) until all ingredients are used up, finishing with a top layer of cheese.
- Bake: Cover the dish and bake for 30 minutes. Then, remove cover and bake for an additional 10 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
- Serve & Garnish: Let it cool slightly before serving. Optionally, you can drizzle vegan buffalo sauce on top for additional flavour.
