Reawakening Beauty: Vegan Truffle Tofu Glow Pasta

Ingredients
- 1/4 block Big Mountain Tofu (or any Firm Tofu)
- Avocado Oil Spray (for grilling)
- 2 cups Vegan Gluten Free Gnocchi (boiled)
- Seasoning of your choice (such as salt, pepper, garlic powder, etc.)
- 1-2 tbsp Organic Vegan Black Truffle Oil
- 1/4 cup Vegan Feta Cheese (or amount to your liking)
Instructions
Makes 2 servings
- Grill Tofu: Slice the tofu into your preferred thickness, then grill it in a pan with a light spray of avocado oil until golden and crispy.
- Boil Gnocchi: In a separate pot, bring water to a boil, then add the gnocchi. Boil for about 3 minutes until they float.
- Combine in Frying Pan: Once tofu is cooked, transfer the boiled gnocchi into the pan with the tofu. Add your seasonings and drizzle the vegan black truffle oil over the mixture.
- Cook Until Crispy: Sauté the tofu and gnocchi together until everything turns golden brown and crispy.
- Serve: Transfer the mixture into a cute little bowl and top with as much vegan feta as you prefer.
