Glow-Rito Plant-Powered Teriyaki Fajitas

Ingredients

  • 1 Organic Red Pepper (sliced)
  • 1 cup Organic Mushrooms (sliced)
  • 1 cup Vegan Teriyaki Meat (no additives)
  • 4-6 Carbonanut Vegan Mini Wraps (gluten-free)
  • 1/4 cup Vegan Black Bean Dip
  • 1/4 cup Vegan Cheese (1 handful per fajita)

Instructions

Makes 2-3 servings

  • Cook the Veggies: Sauté the sliced red peppers and mushrooms in a pan with a little olive oil or avocado spray for 5-7 minutes. Set aside.
  • Cook the Teriyaki Meat: Cook the vegan teriyaki meat in the same pan according to package instructions. Set aside.
  • Warm the Wraps: Heat the gluten-free mini wraps in a pan or microwave for 10-15 seconds.
  • Assemble the Fajitas: Spread black bean dip on each wrap. Add in the sautéed red peppers, mushrooms, and teriyaki meat. Top with vegan cheese.
  • Serve: Roll up the wraps and enjoy!

  • 1 pinch Organic Paprika
  • 1/2 tsp Lemon
  • 1 tsp MCT Oil
  • Salt & Pepper to taste

Toppings (Optional)

  • Organic Strawberries
  • Organic Blueberries
  • Organic Mint Leaves

Instructions

Makes 1 serving

Add organic chickpeas, organic paprika, lemon, MCT oil, and salt and pepper into a large bowl and mash together with a fork until well mixed. Spread onto gluten free bread or rice cakes. Optionally, you can top with organic strawberries, organic blueberries and organic mint leaves as desired. Enjoy!

Instructions

Makes 10-12 Servings

Peanut Butter BBQ Tofu

Ingredients

  • 1 block Organic Firm Tofu (about 14 oz)
  • 1/2 cup Low-Sugar Vegan BBQ Sauce
  • 2 tbsp Peanut Butter (or Almond Butter)

Instructions

Makes 2-3 servings

Start by pressing the organic tofu to remove excess water. Once pressed, cut the organic tofu into bite-sized cubes or strips, depending on your preference. In a bowl, mix the BBQ sauce and peanut butter together until smooth. Next, add in the tofu pieces and toss gently to coat. Let it marinate for at least 2 hours. While the tofu is marinating preheat your oven to 350°F (175°C). Spread the marinated tofu pieces onto a baking sheet lined with parchment paper. Bake for 15 minutes. Remove from the oven and flip the tofu then bake for another 15 minutes. Remove from the over and flip the tofu again and bake for a final 10 minutes. Enjoy your BBQ tofu bites on their own or serve with rice and veggies

Ingredients

  • 1 block Firm Organic Tofu
  • 1 tsp Organic Olive Oil
  • 1 tbsp Hot Sauce (adjust to spice preference)
  • 5-6 large Romaine Lettuce Leaves
  • ½ cup Vegan Caesar Dressing
  • ¼ cup Vegan Shredded Cheese (optional)
  • 1/3-1/2 Organic Avocado (cubed)
  • 2-3 small Organic Radish (chopped)
  • 1/2 cup Organic Cauliflower (florets)

*Pro Tip: To make it a full meal see my roasted vegetable recipe and cook up some gluten free keto noodles or lentil pasta 🙂

Instructions

Makes 2-3 servings

Press the organic tofu to remove excess water. Cut the organic tofu into long strips. Heat the olive oil in a pan over medium heat. Cook the organic tofu strips for 4-5 minutes on each side or until crispy. While to tofu is cooking throughly wash and chop the organic avocado, organic radishes and organic cauliflower. When the tofu is cooked toss them in hot sauce for added spice. Next, assemble the wraps by laying down the romaine lettuce leaves flat. Place a few tofu strips down in the centre and add in the avocado, radishes and cauliflower. Drizzle the vegan caesar dressing overtop or use it as a dip. Sprinkle some vegan cheese over top, if desired. Lastly, carefully fold the sides of the lettuce over the filling, then roll it up like a burrito. Enjoy!

  • 1 package Beyond Meat (crumbled) or Other Vegan Ground Beef
  • 1 package Gluten Free Chickpea Pasta
  • 1 can Diced Tomatoes (14.5 oz)
  • 1/2 package Vegan Cheddar Cheese (shredded)
  • 4 tbsp Hot Sauce
  • 1 serving Fibre Boost
  • Salt & Pepper to taste

Makes 4-5 servings

Preheat the oven to 275°F. Start by cooking the chickpea pasta according to the package directions. Once cooked, drain and rinse the pasta and set aside. Next heat a skillet to medium heat and cook the beyond meat ground beef until browned, this takes about 5-7 minutes, ensure to stir often. Stir in the pasta, tomatoes, hot sauce, fibre boost and vegan cheddar cheese until well mixed. Transfer to an oven-safe dish and place in the oven for 50 minutes.

Apple Glow Protein Crumble: A Skin-Boosting Treat

Ingredients

  • 5 Organic Apples (chopped)
  • 1/4 cup Organic Coconut Oil (melted)
  • 3 tbs Ground Organic Cinnamon
  • 1/2 cup Organic Coconut Flour or Gluten Free Oats
  • 5 tbs Unsweetened Almond Milk
  • 1 pinch Baking Powder
  • 1/2 cup Vegan Salted Caramel Protein Powder (or Vanilla Meal Replacement with two tbs cinnamon powder if you cannot find the salted caramel)
  • 2-3 tbs Ground Flaxseeds (for flax eggs, see instructions)
  • 1/3 cup Monk Fruit Extract (adjust to desired sweetness)
  • 3/4 tsp Salt
  • 1 tbs Vanilla Extract
  • 2 tbs Chopped Walnuts

Instructions

Makes 6-8 servings

  • Preheat the oven to 350°F (175°C)
  • Chop the organic apples into bite-sized pieces
  • Grease a pan with 1 TBS of coconut oil and pour the apples in first with 1 tbs of organic cinnamon. Toss the apples around.
  • In a bowl, combine 2 TBS ground flaxseeds with 6 TBS water. Let it sit for 5-10 minutes until thickened.
  • In a large bowl, mix 1/4 cup coconut flour, 1/2 cup vegan salted caramel protein powder, 2 tbs organic cinnamon, 3/4 tsp salt and 1/3 cup monk fruit sugar.
  • In a pot melt 1/4 cup coconut oil first on low heat and then add the flax egg, 1 tbsp vanilla extract and the chopped walnuts. Stir until combined. Now add together the ingredients that you have mixed prior and stir to form a batter, if needed add in the unsweetened almond milk. Add the crumble over top the apples and bake for 25-30 minutes, or until a toothpick comes out clean.
  • Remove from the oven and let cool slightly before serving. Enjoy warm, or store in an airtight container for up to 3 days.

  • 2/3 cup Vegan Butter Chicken Sauce (Gluten Free)
  • 1 Spring Onion
  • Parchment Paper
  • 1 serving Fibre Boost

Instructions

Makes 1 serving

Begin by pressing the organic tofu to remove all excess water. Once pressed, cut the tofu into bite-sized cubes. Marinate the tofu in the vegan butter chicken sauce for 45-60 minutes to soak up all the flavour. While the tofu is marinating, preheat the oven to 325°F. Line a baking sheet with parchment paper, then arrange the tofu pieces in a single layer, making sure they are spaced out. Bake for about 12 minutes. Remove from the oven, flip the tofu and place back in the oven for another 10 minutes or until golden and crispy. Let them cool down.

You can enjoy these tofu bites as a tasty snack, add them to a charcuterie board, or toss them into any butter chicken dish for a delicious vegan twist! Enjoy!
