
Ingredients
- 5 Organic Apples (chopped)
- 1/4 cup Organic Coconut Oil (melted)
- 3 tbs Ground Organic Cinnamon
- 1/2 cup Organic Coconut Flour or Gluten Free Oats
- 5 tbs Unsweetened Almond Milk
- 1 pinch Baking Powder
- 1/2 cup Vegan Salted Caramel Protein Powder (or Vanilla Meal Replacement with two tbs cinnamon powder if you cannot find the salted caramel)
- 2-3 tbs Ground Flaxseeds (for flax eggs, see instructions)
- 1/3 cup Monk Fruit Extract (adjust to desired sweetness)
- 3/4 tsp Salt
- 1 tbs Vanilla Extract
- 2 tbs Chopped Walnuts
Instructions
Makes 6-8 servings
- Preheat the oven to 350°F (175°C)
- Chop the organic apples into bite-sized pieces
- Grease a pan with 1 TBS of coconut oil and pour the apples in first with 1 tbs of organic cinnamon. Toss the apples around.
- In a bowl, combine 2 TBS ground flaxseeds with 6 TBS water. Let it sit for 5-10 minutes until thickened.
- In a large bowl, mix 1/4 cup coconut flour, 1/2 cup vegan salted caramel protein powder, 2 tbs organic cinnamon, 3/4 tsp salt and 1/3 cup monk fruit sugar.
- In a pot melt 1/4 cup coconut oil first on low heat and then add the flax egg, 1 tbsp vanilla extract and the chopped walnuts. Stir until combined. Now add together the ingredients that you have mixed prior and stir to form a batter, if needed add in the unsweetened almond milk. Add the crumble over top the apples and bake for 25-30 minutes, or until a toothpick comes out clean.
- Remove from the oven and let cool slightly before serving. Enjoy warm, or store in an airtight container for up to 3 days.
