- 1 package Beyond Meat (crumbled) or Other Vegan Ground Beef
- 1 package Gluten Free Chickpea Pasta
- 1 can Diced Tomatoes (14.5 oz)
- 1/2 package Vegan Cheddar Cheese (shredded)
- 4 tbsp Hot Sauce
- 1 serving Fibre Boost
- Salt & Pepper to taste
Instructions
Makes 4-5 servings
Preheat the oven to 275°F. Start by cooking the chickpea pasta according to the package directions. Once cooked, drain and rinse the pasta and set aside. Next heat a skillet to medium heat and cook the beyond meat ground beef until browned, this takes about 5-7 minutes, ensure to stir often. Stir in the pasta, tomatoes, hot sauce, fibre boost and vegan cheddar cheese until well mixed. Transfer to an oven-safe dish and place in the oven for 50 minutes.
