Preheat oven to 320°F. Add the vegan chocolate into an oven safe dish. Place the dish in the oven until the chocolate is melted. Remove from the oven and stir in the organic coconut MCT oil. Next mix in the unsweetened puffed rice and almonds. Place on cookie sheet and put in the freezer for 60 minutes. Remove from the cookie sheet and store in freezer safe zip lock bags.

Turn on the BBQ and lightly spray the grills with the avocado oil spray. Remove all leaves from the organic cauliflower head. Evenly cut the bottom of the cauliflower to create a flat base, this will make cutting the steak slices easier. Cut the cauliflower into 2 even, thick slices, these will be used as the steaks. I personally like to start by cutting the cauliflower in half. The left over cauliflower can be cut into florets and used as a snack. In a small bowl add the avocado oil, lemon juice, sea salt, pepper and thyme, stirring until it is mixed well. Coat each side of the cauliflower steaks with the mixture. Reduce the BBQ heat to medium and cook for 5-6 minutes per side, or until the bottom is slightly charred. Remove from BBQ, let cool and enjoy!

Cook the organic spinach with 3 tbs water. When sautéed, add 1/8 cup water and the bouillon cubes until they are dissolved. Pour the mixture and the rest of the water into a blender and add 1 package of the firm organic tofu. Blend until creamy consistency is reached, if you find it is not blending add a little bit more water. If you accidentally add too much water you can blend in some extra firm tofu until desired consistency is reached. You can put this on top of pasta, eat it as a dip or enjoy it with some gluten free tortilla chips.

Pour into a large bowl and stir in the Gluten Free Quick Oats and the Vegan Keto Chocolate Chips. Place in the fridge for 60 minutes. Top with some additional monk fruit sweetener and enjoy!

Turn on the BBQ to medium heat. Slice the Organic Sweet Potatoes 1/2 inch wide pieces and place on a baking tray. Lightly spray one side of the Sweet Potato slices with the Avocado Oil Spray. Coat with the Herbed Spicy Sea Salt, Pepper, Paprika and optional Garlic Powder. Turn each slice over and repeat by lightly spraying with the Avocado Oil Spray and then coating again with the spices. Carefully place each Sweet Potato slide directly on the BBQ and grill for 10-12 minutes per side (or until soft when pierced with a fork). Remove from the BBQ, let cool and enjoy!

Drain the chickpeas and add them into a large glass bowl. Wash and chop the green pepper, onion and cucumber then add them into the bowl with the chickpeas. Stir until they are well mixed. To make the dressing, in a separate bowl add the tahini, lime juice, MCT oil and salt, and mix well. Pour the dressing over the chickpea mix and toss until completely covered.

1/4 cup Unsweetened Dried Cranberries (chopped) or 14 Medjool Dates (pitted)
1/4 cup Raw or Roasted Almonds (crushed)
1/4 cup Gluten Free Quick Rolled Oats
4 tbsp Organic Almond Butter
1 tsp Cinnamon
1-2 tbsp water (if needed)
Instructions
Line a baking tray with parchment paper. Place the cranberries (or dates), almond butter, rolled oats and cinnamon into a food processor and blend until a dough begins to form. Add water if needed. Using your hands, roll tablespoonfuls of the mixture into snack-sized balls. Put the crushed almonds onto a plate or flat surface and roll the balls in the nuts to coat. Place the balls onto the baking tray and refrigerate for 30 minutes.
