- 1 pack Firm Organic Tofu (350g)
- 1 pack Extra Firm Tofu (as needed)
- 3 cups Organic Spinach
- 2 Vegan Bouillon Cubes
- 1/4 cup Filtered Water
- 2 tbs Nutritional Yeast
- 4-5 Olives (for garnish)
Cook the organic spinach with 3 tbs water. When sautéed, add 1/8 cup water and the bouillon cubes until they are dissolved. Pour the mixture and the rest of the water into a blender and add 1 package of the firm organic tofu. Blend until creamy consistency is reached, if you find it is not blending add a little bit more water. If you accidentally add too much water you can blend in some extra firm tofu until desired consistency is reached. You can put this on top of pasta, eat it as a dip or enjoy it with some gluten free tortilla chips.
Spinach is loaded with vitamin C. Vitamin C is an antioxidant that contributes to the production of collagen, which can help your body create new skin cells, giving you a more refreshed look.
