Vegan Gluten Free Anti-Aging Pumpkin Seeds

Ingredients:

  • 1 medium Pumpkin
  • 1/2 tsp Garlic Powder (x2)
  • 1/2 tsp Paprika (x2)
  • 1/2 tsp Cayenne (x2)
  • 1/2 tsp Spicy Organic Herbed Sea Salt – Herbamare (x2)

Instructions

Before beginning preheat the oven to 350°F

Scoop seeds from inside the pumpkin and clean off the fibrous strands using water. Afterwards rinse pumpkin seeds and drain using a strainer, do not dry. Place strained pumpkin seeds into a bowl and add 1/2 tsp of garlic powder, paprika, cayenne and sea salt, let sit for 10 minutes. Add the pumpkin seeds back into the strainer to remove any excess water. Lay the pumpkin seeds flat onto a baking tray lined with parchment paper and top with another 1/2 tsp of garlic powder, paprika, cayenne and sea salt. Place in the oven for 30 minutes, turning over at the halfway point.

Benefits: Pumpkin seeds have magnesium, vitamin E, iron and zinc plus many others. Vitamin E is a great antioxidant which can reduce inflammation. Inflammation is linked to health and skin issues. Magnesium also has anti-inflammatory benefits making this a great snack for your skin.

Scoop cookies onto a cookie sheet lined with parchment paper. I like to use a 1 1/2 tbs scoop to form a cookie ball. Place the cookie tray into the over on the center rack for 10-12 minutes. Once finished baking, remove the cookies from the over and let them cool for an additional 10 minutes as they are very delicate when first removed but will firm up once cooled. Enjoy this healthy snack!
